Who's got the best messy nachos

Gonna do Monday night football right tonight and do up a batch of messy nachos. Who's got the best recipe? What do you guys like on yours?

Don't have a great nacho recipe but I have a good cheese dip that is simple.

On top of nachos.... cheese, beef, cheese, jalapeños, cheese, pico, guacamole, and more cheese. :D
 
I fry my own tortillas. This brand is my favorite:

No other brand I've tried has come close to these ones. If you can't find these ones, I wouldn't even bother making them.

I cut them into fours and make a big pile then fry them outside on the grill sideburner. This prevents the house from smelling like oily corn. I use the largest pan I can find and fill it up with about an inch of canola oil. Wait for it to heat up and keep testing with a single tortilla. It'll take you a few tries to find the right temp but I can make a big pile pretty quickly. I set them on paper towels to soak up any extra oil and immediately hit them with salt.

If I'm feeling fancy I'll grill a skirt steak at the same time to cut into small pieces to go with the nachos. I just like green onions and a little cheese. Put them quickly in the over under the broiler to melt the cheese.

Now my sauce I can't help you with. It does have secret ingredients, but I guarantee you would love it. ;) Everyone does.

love vie mine with pulled pork, crema, diced jalapeños, queso, shredded cheese, pico, and guac

i have ate to take a shower and change clothes after I eat them
 
I like to top with onion, roasted poblano and 3-cheese.....oh, and carnitas. Sour cream and hot sauce on the side.

Carnitas in the pressure cooker is super easy. Cubed pork shoulder and made-ahead smoked pork stock (mirepoix, bay, thyme & smoked ham hocks, I've usually got a gallon of this in the deep freeze). Falling apart in 30 minutes at 1 bar. Release pressure, add onion, garlic and El Yucateca Achiote liquid, reduce down to a laquer.

Mmmmm pork sounds good on some.

Apparently chipotle will do nachos and I really want to try them. The nacho chips they have are really good. Like a lime/salt chip.
